Gluten Free Strawberry Shortcake Waffles
Ingredients:
3-4 cups of GF waffle/pancake batter or GF flour
4 eggs
3 tbsp of coconut oil
1 cup water2 lbs of strawberries, halved
2 stalks of rhubarb, coarsely chopped
¼ cup water
1 tbsp sugarWhipped cream via a fancy lil can
Assortment of berries (optional)For waffles:Mix flour, eggs, coconut oil and water in a large mixing bowl, whisk until smooth, add a little more water for fluffier waffles.
For compote: add water, sugar and rhubarb to a medium heavy saucepan, allow rhubarb to simmer on medium heat until tender - 5 minutes. Add strawberries and allow to stew for 20 or so minutes, until strawberries soften and liquid reduces by half. For thicker compote, add a tablespoon of cornstarch. Serve warm.
